What is "Hiire?"

"Hiire is a process of pasteurization: heat Sake 60-65 degrees for 30 min to kill yeast & germs. Sake is made by fermenting yeast. Once heat treatment called “hiire” is applied, the yeast disappears and the fermentation stops. By doing this, the taste of sake is kept consistent, and the same time, it has purpose of sterilization.
